Ingredients:
Winter carrots 1 kg
Milk 1 ltr
Ghee 1 tbsp
Carrot chopped
Milk 1 cup
Ghee 3 tbsp
Cashew nuts chopped 2 tbsp
Almond chopped 2 tbsp
Charoli 1 tbsp
Raisins 1 tbsp
Pressure cooked carrots
Milk boiled & reduced
Sugar 1 cup
Green cardamom powder ½ tsp
Saffron 10-12 strands
Khoya 100 gms
Method:
Step 1: Sauté Carrots
Heat a pressure cooker and melt some ghee.
Add chopped winter carrots and sauté until they become slightly soft and aromatic.
Step 2: Pressure Cook Carrots
Pour in a little milk, mix well, and close the lid of the pressure cooker.
Cook the carrots until they are soft and mashy.
Once done, release the pressure and lightly mash the cooked carrots.
Step 3: Sauté Nuts and Carrots Together
In the same pressure cooker, add more ghee if needed.
Add chopped cashew nuts, almonds, charoli, and raisins to the mashed carrots.
Sauté the nuts and carrots together until the nuts turn golden and aromatic.
Step 4: Combine with Milk
Transfer the carrot and nut mixture to a heavy-bottomed pot.
Add boiled and reduced milk, stirring continuously to mix everything well.
Cook the mixture over medium heat, letting the milk blend with the carrots and thicken.
Step 5: Sweeten the Halwa
Stir in sugar and mix well until the sugar dissolves completely.
Continue cooking the halwa, allowing it to develop a glossy and rich texture.
Step 6: Add Flavor and Enrich
Sprinkle green cardamom powder for fragrance and flavor.
Soak saffron strands in milk and add them to the halwa for color and aroma.
Crumble khoya and mix it into the halwa, stirring until it blends seamlessly.
Step 7: Final Cooking
Cook the halwa on low heat for a few more minutes until it thickens.
Ensure the halwa leaves the sides of the pot and has a smooth consistency.
Step 8: Garnish and Serve
Garnish the halwa with a few additional nuts or saffron strands for a festive touch.
