Funfetti cookie dough ice cream sandwiches!! (Vegan, Grain/gluten free)

I realize we’re still in winter for most of us here in the US— but if you love ice cream 24/7, RUN to go make these!
Inspired by my dear friend @secretlyhealthyhome and her delish cookie dough ice cream sandwiches!
cookie Dough layer
1C almond flour
1/3C tapioca starch
Dash salt
1/2 tsp almond extract
1 tsp vanilla extract
1/4C softened refined coconut oil, butter, or non hydrogenated palm oil shortening) (measured solid)
1/4C maple syrup (Use any sticky sweetener)
2-3 tbsp granulated sweetener
2/3C rainbow sprinkles
1 pint Vanilla Ice cream of choice
Directions
-Prepare the cookie dough in a large bowl, by mixing flours, then stirring In wet ingredients. Mix by hand or with a mixer on low speed.
-divide the dough in half.
-Line an 8- x 8-inch pan with parchment paper on all sides and bottom.
-Press one half of the dough into the prepared pan. Cover with parchment paper . Press the other half of the dough into the bottom of the pan on top of parchment paper and into the pan.
-You will have 2 layers of cookie dough, separated by 1 parchment paper. Freeze for 2 hours.
FOR THE ICE CREAM LAYER:
- Set the ice cream out at room temp to a soft& spreadable consistency. When the ice cream is soft, remove the pan from freezer. Remove the top cookie dough layer and set aside.
spread and smooth the ice cream over the bottom cookie dough layer. Place the other cookie dough layer on top of the ice cream to form a sandwich.
Cover again and Freeze for 3-4 hours.
Remove from freezer. Remove sandwich from pan and cut into bars.
Enjoy!
