Fettuccine & Cauliflower with Pepper Cream Sauce:
This is a very light and airy take on the classic French sauce au poivre.
Ingredients:
1/2 lbs fettuccine noodles
1 Tbs corse ground black pepper
1 Tbs corse ground green pepper (this is optional. You can substitute with all black pepper.)
2 Tbs plant-based butter
2 cups plant based cream
1 lbs cauliflower floretts
1 Tbs sea salt, divided.
1 1/2 cups light white wine, I used Pinot Grigio
1 cup shredded plant-based Parmesan cheese
Directions:
Add 2 tsp salt to the pasta cooking water before adding the pasta, cook according to brand’s directions to al dente, drain and reserve 2 cups of the pasta, cooking water.
Add butter to a large sauté pan, add ground, black pepper, and cook until fragrant, about two minutes. Add cauliflower florettes, sauté For about five minutes. Add white wine and allow to evaporate, about 10 minutes.
Add plant cream, continue to cook for another five minutes, add vegan Parm, followed by the cooked noodles. Toss to combine.
Serve and enjoy right away.
