Egg Fried Rice

Ingredients:

- 600g (1.32 lbs) cooked, cold rice
- 3 tbsp peanut oil
- 4 eggs, beaten
- 4 spring onions, thinly sliced
- 300g (0.66 lbs) diced ham
- 1/2 tsp sugar
- 1/2 tsp MSG (optional)
- 1/2 tsp white pepper
- 2 tbsp soy sauce

Method:

1. Heat 1 tbsp of oil in a hot wok until it starts smoking.
2. Quickly cook the eggs, then remove them from the wok and set aside. Add another tbsp of oil to the wok.
3. Toss in the diced ham and spring onions, stir-frying them briefly.
4. Add the cold rice. Break it up and toss thoroughly to combine.
5. Sprinkle the MSG, sugar, and white pepper around the edges of the wok, then pour in the soy sauce. Toss everything well to evenly distribute the seasonings.
6. Stir-fry the rice for 3-4 minutes, or until it starts to toast slightly and is heated through. If your burner is less powerful, this may take 6-7 minutes.
7. Serve your delicious egg fried rice hot and enjoy!
