. Curd (1/2 Cup)
. Red Chilli Powder (1.5-2 TBSP)
. Turmeric Powder (1 TSP)
. Salt to Taste
. Seeraga Samba Rice[Soaked for 30 mins] (500 gms)
Dindigul Biryani Masala:
. Coriander Seeds (3 TSP)
. Black Pepper Corns (1/2 TSP)
. Fennel Seeds (1/2 TSP)
. Cumin Seeds (1 TSP)
. Cinnamon sticks (4 inches)
. Bay Leaf (1-2 nos)
. Mace (1 nos)
. Cloves (8-10 nos)
. Green Cardamom (3-5 nos)
. Star Anise (1 nos)
. Black Stone Flower (1 nos)
. Cashews (8-12 nos)
Grind into a semi fine powder
Biryani Paste
. Shallots (30 gms)
. Garlic (30 gms)
. Ginger (20 gms)
. Water as required
For Biryani:
. Groundnut oil (2 TBSP)
. Ghee (2-3 TBSP)
. Onion (3 medium sized)
. Chopped Coriander Leaves (1/2 Cup)
. Chopped Mint Leaves (1/2 Cup)
. Biryani Paste (3 TBSP)
. Dindigul Biryani Masala (2 TBSP)
. Marinated Chicken
. Cook on low flame untill oil is separated
. Hot Water (4 Cups)
. Soaked Rice
. Cook Untill Water and Rice are on same level.
. Cook on dum for 15 mins
Serve with Raita & Chicken Rasam :)
