Dhoka r Dalna - A Niramish (No Onion and garlic) recipe for veg days - Dhoka is a fried cake made with Chola r Dal ( Chana Dal ) along with coconut and a few basic seasonings! Cook this in a simple bengali style gravy and there you have Dhoka r Dalna to enjoy with luchi! ✨
Making the dhoka:
- Rinse and soak 300 gms of Chola r Daal ( Chana Daal ) overnight
- Make a coarse paste along with water (Do it in small batches)
- Heat 2 tbsp mustard oil
- Add 1 tbsp ginger - green chilli paste , 1/2 tsp turmeric powder and 1/4 tsp hing
- Add the paste and cook for 1 minute
- Add 1 tsp salt , 1 tsp sugar , 1/4th cup grated coconut and 1 tbsp chana dal besan (to give a good binding)
- Cook on low flame till it starts to form a dough
- Oil a container and add the cooked daal
- Press it down to give a shape
- Once it cools to room temperature- Cut in squares or diamond shapes
- Rest for 30 min in the fridge
- Fry in oil to give a light brown crust
For the Dalna:
- Heat 1 tbsp mustard oil
- Temper with 1/2 tsp cumin seeds , 3 cloves , 2 green cardamom,1 inch cinnamon, 1 dry red chilli and 1 bay leaf
- Add 1/4 tsp hing and 1 tbsp ginger paste - Cook for 30 seconds
- Add potatoes and season with salt
- Fry till it gets a golden crust
- Add spice mix of: 1/2 tsp turmeric powder , 1 tsp red chilli , 1/2 tsp Kashmiri red chilli , 1 tsp coriander and 1.5 tsp cumin powder. Adjust salt and add 1 tsp sugar
- Cover and Cook with 1 tsp brown ghee till oil separates
- Add paste of 1 tomato. Cook for 2 minutes
- Add 1/4 th cup grated coconut. Cook for 4 minutes
- Add hot water (2 cups)
- Simmer for 15-20 minutes till potatoes are done
- Add dhoka, 2 slit green chillis and 1/2 tsp garam masala
- Cook on low flame for 2 minutes
Pro tip: Turn off the gas and keep the dhoka for 10 minutes. Remove and keep it aside from the curry before serving as it might break.
