INGREDIENTS
3 tablespoons olive oil
1 large onion chopped
2 cloves garlic chopped
1 inch (2½ cm) ginger grated,
4 carrots chopped into small pieces
1 teaspoon salt or more to taste
2 twists of black pepper
1 litter chicken broth add more if necessary
1 tablespoon apple cider vinegar
1 and half cup thickness cream
1 handful parsley or cilantro.
In maximum 50 minutes of simmering and just a little stirring and blending you'll end up with this buttery creamy vegetarian wonder. Soft, warning and nutritious.
