This “5-Bean” Blue Zone Minestrone is my raw vegan version of a soup consumed by some of the most long lived people on the earth.

The beans chosen are sprouted and frozen along with harder veggies like the carrots, onions, etc. I added cruciferous kale and other veggies also to make this a mega satisfying and hearty raw meal.

And no - it’s not cold. I’m not a fan of cold soup unless it’s a super hot day and I’m eating outside…. The veggies are thawed to room temp and the sauce warms up as it blends in the blender. No need to heat it up, it’ll be warm. It’s a nice bonus to warm the bowls in the dehydrator first to retain more warmth from the soup base. It’s what many call “warmed to raw” meaning it’s warmed within the acceptable temperature max 115F.
