This buttery toasted grilled cheese sandwich with sourdough bread and juicy tomatoes is next level. Try the cheesy crust by melting cheese with butter (I used plant-based cheese and butter from Violife), placing your sandwich on top and toast it for a few minutes until the cheese is crunchy and lightly colored. So delicious!

This sandwich is filled with:
Basil pesto (vegan)
Heirloom tomatoes
Cheese (i used vegan mozzarella-style shreds)
Pickled red onion (DM for recipe)
Basil leaves
Balsamic glaze
Salt, pepper, chili flakes
Black olive paste
