Cabbage Patch Soup

Cabbage Patch Soup is a winter staple in our house! Dave has declared that he could eat this every day of his life. I haven't tested him on that. :)

In this video I'll show you how to make this hearty, delicious soup, how to dehydrate cabbage, and how to create a shelf stable Cabbage Patch Soup "kit" that you can tuck away and pull out whenever you need an easy-to-throw-together meal.

RECIPE

Ingredients:

1 lb hamburger
28 oz can of diced tomatoes
2 15 oz cans of kidney beans (slightly drained)
Roughly 8 cups of beef broth or water and beef bouillon (I use 2 big scoops of beef Better Than Bouillon)
8 cups shredded cabbage
2-4 TBSP chili powder
Salt and pepper to taste

1. In large soup pot or Instant Pot, brown the hamburger until no longer pink (see notes below for optional add-ins).
2. While hamburger is browning, chop 1/2 large head of cabbage into thin ribbons
3. Season hamburger at end of cooking time with chii powder, salt and pepper
4. Add tomatoes, beans and half the cabbage to pot
5. Add 4 cups beef broth (or water and beef bouillon)
6. Add second half of cabbage and 4 more cups beef broth
7. Salt and pepper lightly
8. Cook until cabbage is tender. In Instant Pot, this is 45 minutes on Soup mode. In large soup pot on stove, this will be several hours. Soup taste better the longer it cooks! It really shines on day two. :)

***This is the bare-bones recipe. If you have time, I suggest adding these two optinal ingredients:

—1 medium onion, minced fine and cooked with the hamburger OR 1/3 or so dehydrated onion flakes added to soup with the broth
—2-3 TBSP minced garlic, added to the hamburger in the last two minutes of cooking.
