BROCCOLI & CARROTS TOTS! egg free
Ingredients
• 250g (1 3/4 US cups) potatoes, steamed or boiled
• 100g (1 1/2 US cups) broccoli florets, steamed or boiled
• 100g (1 carrot) carrots, steamed or boiled
• 30g (1/4 US cup) Parmesan or cheddar cheese, grated
Method
1. Boil or steam your broccoli, potatoes, and carrots until soft (check with a fork).
2. Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
3. Place cooked broccoli, carrots, and potatoes in a bowl and mash them with a fork or potato masher.
4. Add the cheese, season with salt and pepper if desired, then mix well to combine.
5. Scoop a heaped tablespoon of the mixture and form it into a tot.
6. Place your tots on the prepared tray.
7. Bake for 20-25 minutes, until golden.
8. Let them cool before serving.
