Breakfast muffin Makes 4 muffins. ▫️2 ripe avocados ▫️Juice of half a lime ▫️Flaky salt ▫️8 vegan sausages, I used Richmond Meat Free ▫️4 slices vegan cheese, I used Nurishh cheddar ▫️4 English muffins ▫️2 salad tomatoes, sliced ▫️4 hash browns Using a fork, mash your avocado with lemon juice and salt. Remove the skin from all of the sausages, add salt and mash them together in a large bowl. With slightly wet hands, shape into thin round patties. Fry in shallow oil for 4 minutes each side, or until cooked through. Place a cheese slice on each patty and place a lid on the pan until the cheese melts. Assemble your muffin, starting with the avo and followed by the sausage, tomato and hash brown. Wrap in parchment paper and store in the fridge for up to 3 days - then, when you want to eat them, simply place in the microwave for 1 minute.
