Try this and you’ll never no to mushrooms!
Ingredients:
⁃ 200g enoki mushrooms, cleaned and trimmed
⁃ Olive oil for frying
For the Batter:
⁃ 1 cup all-purpose flour
⁃ 1/2 teaspoon turmeric powder
⁃ 1/2 teaspoon salt
⁃ 1 cup cold water
For the Sweet and Chili Sauce:
⁃ 2 tbsp soy sauce
⁃ 1 tbsp honey
⁃ 1 tbsp gochujang paste (adjust to taste for spice level)
⁃ 1 small onion, finely chopped
⁃ 2 spring onions, thinly sliced
⁃ 2 cloves garlic, minced
⁃ 1 tbsp olive oil
⁃ 1 tsp sesame seeds for garnish (optional)
Instructions:
⁃ Prepare the Enoki Mushrooms by clean the enoki mushrooms by trimming off the roots and separating them into smaller bunches.
⁃ Pat them dry with a paper towel to remove excess moisture.
⁃ To make the batter combine the all-purpose flour, turmeric powder, and salt in a mixing bowl.
⁃ Gradually add cold water to the dry ingredients, whisking until you have a smooth batter. It should be thick enough to coat the mushrooms.
⁃ Heat the olive oil in a pan or pot over medium-high heat.
⁃ Dip each bunch of enoki mushrooms into the batter, ensuring they are evenly coated.
⁃ Carefully place the battered mushrooms into the hot oil and fry until they are golden brown and crispy. This usually takes about 2-3 minutes.
⁃ Transfer the fried mushrooms to a serving plate.
⁃ To prepare the Sweet and Chili Sauce, heat the oil over medium heat.
⁃ Add chopped onions and garlic, sauté until they are soft and translucent.
⁃ Stir in gochujang paste , honey, soy sauce. Mix well until the ingredients are combined and the sauce begins to simmer.
⁃ Let the sauce simmer for a few minutes until it thickens slightly.
⁃ Taste and adjust the seasoning, adding more honey or gochujang paste if desired.
⁃ Finally, add sliced spring onion.
⁃ Add the mushroom to the prepared sweet and chili sauce, ensuring they are evenly coated.
⁃ Garnish with sesame seeds and additional sliced spring onions if desired.
