So many good memories of eating cereal in the morning on the weekends while my mom was sleeping. I would sit in front of the TV with a big smile, watching my favorite cartoon! (X-Men or Justice Leauge) I love recreating the vibes with better ingredients.
I was asked to make this Cap'N Crunch-style cereal, and while the OG probably comes to mind, my favorite was the peanut butter. I get down with peanut butter. I had fun making this recipe, but making these little balls by hand took forever. This would be an excellent project for the kids to see how food is made or to get some helping hands. I loved the taste of this recipe even though the texture is more dense than the og version. Feel free to play around with different flours to land the desired texture.
What was your favorite childhood cereal you would like to see remade?
Ingredients:
1 cup cornmeal
1/4 cup cornstarch
1 cup of arrowroot flour (Will have more puff with flour)
3 tbsp of water
1 tbsp maple
2 tbsp peanut butter
1 Tbsp avocado oil
1 -2 drops vanilla extract
Dash of salt
1/2 cup coconut sugar
Step 1. Mix all dry ingredients.
Step 2. Mix all wet ingredients
Step 3. Combine the dry and wet ingredients. (Add more arrowroot flour if the mix is still too moist)
Step 4. Use 1/4 tsp to make small balls. Add to parchment paper in a pan and bake for about 15 minutes.
Step5. Allow to cool. Eat them by themselves or enjoy them with plant milk.
