Who else is fed up of diet culture and just wants to eat their noodles in peace?

Ingredients (serves 2)

1 tbsp coconut oil
1 block tofu, pressed and cubed
1 onion, chopped
2 garlic cloves, grated
Thumb of ginger, grated
1 chilli, finely chopped
250g mushrooms, quartered
4 tbsp BBQ sauce
2 tbsp soy sauce
3 tbsp water
300g instant noodles
2 heads of pak choi, roughly chopped
Handful of fresh coriander, finely chopped
Handful of spring onions, finely chopped

Method

1. Melt the coconut oil in a large pan and add in the onion, garlic and ginger.
2. Once softened, add in the chilli, mushrooms and tofu and fry for 5 minutes.
3. Add in the BBQ sauce, soy sauce and water and fry for 5-10 minutes, tossing together until browned.
4. Mix in the instant noodles, pan choi, lime juice and zest and leave to cook for 3-4 minutes until the noodles and pan choi are ready.
5. Serve sprinkled with coriander and spring onion (or extra fresh chilli if you like).
