It has protein, fibre, vitamin and mineral rich and antioxidants. And the Tandoori mayo with Rice vinegar and raw honey is just *chumma* *chefs kiss*
Recipe: Serves 2 people who are very hungry
5-6 Curly Kale
1 stem Romaine Lettuce
1/3 Iceberg Lettuce
[You don't have to add all 3, Add what you have. Works with steamed cabbages too]
Tomatoes
1 Large Onion
1 medium Cucumber
1 medium bell pepper
2-3 tbsp Sprouts/microgreens of your choice (I used rocket micro greens)
Sauce :
1 tbsp regular vegan mayo
1tbsp tandoori mayo (veg)
1 tsp rice vinegar/lime juice
1 tsp raw honey
1/4 tsp salt
1.2 tsp sugar
[Mix everything really well]
Paneer :
200g Paneer
1/4 Kashmiri Chili powder
1//4 tsp cumin powder
1/4 tsp black pepper powder/freshly ground
1/4 tsp salt
1 tbsp mustard oil
1 tbsp vegetable oil for frying
Fry on medium heat until a little charred on both sides
