This roti is a staple at my house & is so flavorful & delicious that you can eat it with just a simple raita.

My dad eats a gluten free version of this, only made with Besan, no aata. The entire recipe otherwise remains the same. Only difference is, when you’re rolling it, you’ll need to do it in a butter paper.

Makes 4-6 rotis
1 onion
2-3 green chillies
1/2 cup water
1 cup besan
1 cup atta
Handful of coriander leaves, finely chopped
Salt to taste
1/4 tsp haldi
1 tsp ajwain
1 tsp red chilli powder
1 tsp coriander powder
Blitz together onion, green chillies & water till completely smooth. Add the atta & besan to a bowl with the coriander leaves, onion puree, all the spices & knead to a soft sticky dough. Cover with a cloth & let this rest for 10-15 minutes. Roll it into rounds using some dry atta with a rolling pin or just flatten it with your palms. The roti should be slightly thick. Cook on a hot tawa & finish in an open flame. Rub some ghee on top. Serve hot with raita & mirchi ka achar & dig in.!
