Ingredients:

* Leftover chapati: 3, cut into small pieces
* Eggs: 2
* Onion: 1 medium, finely chopped
* Tomato: 1 medium, finely chopped
* Crushed ginger-garlic: 1 tsp
* Curry leaves
* Cinnamon stick: 1 small piece
* Bay leaves: 1
* Cloves: 2-3
* Dry red chili 1
* Green chili: 1, slit
* Coriander leaves: For garnish
* Red chili powder: ½ tsp
* Coriander powder: ½ tsp
* Sambar powder: ½ tsp
* Garam masala: ¼ tsp
* Water: 3 tbsp
* Salt: To taste
* Oil: 3 tbsp
Method:

1. Cut the leftover chapati into small, size as you wish
2. Heat 3 tablespoons of oil in a pan. Add bay leaves, cinnamon, cloves, and dry red chili. Sauté until aromatic.
3. Add the finely chopped onion and sauté until it turns translucent.
4. Add curry leaves, green chili, and crushed ginger-garlic. Sauté until the raw smell disappears.
5. Stir in chili powder, coriander powder, sambar powder, and garam masala. Mix well and sauté for a few seconds.
6. Add the chopped tomato and cook until it becomes soft and mushy. Season with salt and add 3 tablespoons of water. Cook on medium flame for 2 minutes until the mixture thickens.
7. Push the masala mixture to the sides of the pan, creating a well in the center. Add 2 tablespoons of oil to the center and crack in the eggs. Allow them to cook for about a minute, then gently mix with the masala until the eggs are partially cooked.
8. Add the chapati pieces to the pan and mix thoroughly with the egg-masala mixture. Adjust salt if needed.
9. Sprinkle chopped coriander leaves on top and serve hot.
