Vegan Chocolate Bundt Cake Recipe!

You’ll want this entire cake all to yourself! Rich, chocolatey and topped with a ganache glaze…it’s nothing Bundt delicious!

Ingredients:
1/2 cup oil of choice
1 1/4 cups sugar
2/3 cup vegan yogurt
1 cup milk of choice
1 cup fresh brewed coffee
1 tsp vanilla extract
2 1/2 cups AP flour or GF blend
1 cup cocoa powder
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
Ice Cream

Ganache-
2/3 cup milk of choice
1 cup dark chocolate

Instructions:
Preheat oven to 350° F
Prepare your Bundt pan with oil and dust with cocoa powder
Mix together the oil, sugar, yogurt, milk, coffee and vanilla
Sift in the flour, cocoa powder, salt, baking powder and baking soda
Pour into prepared pan
Bake 55-60 minutes, until toothpick comes out mostly clean
Cool on pan
Turn out onto cake plate and let cool completely

Ganache-
Heat milk to simmering over med heat
Pour milk over the chocolate chips and whisk until smooth and creamy
Allow to cool and thicken, then whisk again until thick but pourable
Pour over cake
Serve with a scoop of ice cream
