Ingredients
320 gram room temp of blueberry water(240 grams blueberry, cooked in a pan. added water to weight 320 gram)
500 gram bread flour
1 tbsp dark brown sugar (option: barley malt syrup if you have)
7 grams Salt
3 grams instant yeast
2 to 3 oz dried blueberry
coating the bowl: nonstick spray or 1 tablespoon neutral oil
Water Bath
2 quarts water
2 tbs molasses( option: honey or barley malt syrup): add a sweetness
1 tsp baking soda: shine and chewy texture of the crust

Egg Wash: 1 egg beaten and strained to remove any bubble or chalaza.

Instructions
Prepare the dough:
1. Make the blueberry water
2. combine flour, yeast, brown sugar, and salt.
3. Add blueberry water and mix with a tool until all ingredients is incorporated and you have a rough dough.
3. Knead the dough:
Hand-kneading: Knead for 10 minutes, add dried blueberry in half way.
Kneading in a stand mixer: Beat for 5 minute. add dried blueberry in half way.
After kneading, the dough should still feel a little soft and when grab to pull, it would not tear.
4. Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover and let the dough rise at room temperature for 1-2 hours or until double in size.
5. Shape the bagels: When the dough is ready, divide the dough into 8 equal pieces. Shape each piece into a ball. With your finger, poke a hole though the center and slowly make the hole wider.
6. Place these on the prepared trays. Cover and leave to prove for a further 30 minutes.
Preheat oven to 400 degree F.
7. Water bath: Fill a large, wide pot with 2 quarts of water. Bring water to a boil and add molasses and baking soda. duce heat to medium-high. Drop bagels in, 2-4 at a time, cook each side for 30 seconds each. Use a slotted spoon or tool and drain excess water completely.
8. Apply egg wash
9. Bake for 20 mins or until golden brown.
10. transfer to a wire rack to cool completely.
