- 1 bell pepper, quartered
- 1 1/2 lbs tomatoes, sliced in half
- 1 onion, quartered
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 cloves garlic
- 1/2 cup stock (or coconut milk)
