Ingredients:
- 500g bread flour
- 10g salt
- 10g yeast
- 145g lukewarm water
- 50g sugar
- 50g egg yolks at room temperature
- 85g whole egg at room temperature
- 40g oil

For Egg Wash:
- 1 egg yolk

For Topping:
- Oregano
- Chili flakes
- Garlic powder

Production Steps:
1- Activate Yeast: In a bowl, mix lukewarm water, sugar, and yeast. Let it sit for 10 minutes to activate.
2- Combine Wet Ingredients: Add egg yolks and whole egg to the yeast mixture, stirring to combine.
3- Mix Dry Ingredients: Add bread flour and salt to the bowl. Mix with a spoon until the dough starts to come together.
4- Incorporate Oil & Knead: Add oil and knead the dough by hand until it becomes smooth.
5- First Fermentation: Shape the dough into a ball, place it in a greased bowl, cover with plastic wrap, and let it ferment for 45-60 minutes or until doubled in size.
6- Degas & Rest: Gently press out the air, then pre-shape the dough by pulling the edges into the center. Cover and let it rest for 10 minutes.
7- Shape the Turkey:
* Using a bench scraper, cut two sections to form wings. Round them gently and position them near the breast area.
* Make a small slit on the upper side between the wings to form the neck.
* For the drumsticks, cut out two small pieces and round each into a drumstick shape.
8- Final Proofing: Place the shaped dough on a parchment-lined baking sheet, cover with plastic wrap, and proof for 45 minutes.
9- Egg Wash & Toppings: Brush the dough with egg yolk. Place small pieces of aluminum foil under each drumstick for support. Score the bread gently with a lame or sharp knife, then sprinkle with oregano, chili flakes, and garlic powder.
10- Bake: Preheat the oven to 375°F (190°C) and bake until the turkey bread reaches a deep golden-brown color.
