Ingredients - yields 2 burgers
1 block tofu (350g)
1 bun
optional: tomato salsa

Batter:
1/2 cup Flour
1 tbsp Cornstarch/cornflour
Garam masala
Paprika
Salt
1/2-3/4 cups Sparkling water

Marinade:
1/3 cup soy sauce
2 tbsp apple cider vinegar
1 tbsp oil
1 tsp brown sugar
1 tsp paprika
1/4 cup tomato paste
1 nori sheet

Tartare sauce:
1/4 cup vegan mayonnaise
1 tsp mustard
1 tbsp lemon juice or apple cider vinegar
1 tbsp dill
pinch of coconut sugar
optional: water for desired consistency

Directions

1. First, halve the block of tofu and carve out fish-like shapes—just make sure they aren’t too thick for that perfect texture.
2. Next, score each piece of tofu. This helps the marinade penetrate and adds to the flavor.
3. Now, let the tofu soak in the marinade for at least 1 hour before frying. The longer, the better!
4. While that marinates, prepare the batter by combining the ingredients and mixing well until you have a smooth consistency with little to no lumps.
5. Heat some oil in a pan and fry the tofu until golden brown on both sides. You want that crispy exterior!
6. Finally, assemble the burger with all your favorite toppings and enjoy!
