Spinach Pastry
Ingredients for the dough:

4 cups of flour
60 grams of soft butter
1 large egg
1/2 cup of vegetable oil
1/2 cup of warm milk
1 cup of warm water
1 tablespoon of salt
2 tablespoons of vinegar
1 packet of baking powder

Ingredients for the filling:

1 kg of spinach (leaves)
200 grams of white cheese or cottage cheese
1 onion
1 teaspoon of paprika
1 teaspoon of chili powder
1 teaspoon of black pepper
1 scant teaspoon of salt
3 tablespoons of vegetable oil

To spread between layers:

4 tablespoons of butter
1/2 cup of vegetable oil

To sprinkle on the dough while rolling:

2 tablespoons of wheat starch
10 tablespoons of flour (mix in a bowl)

Combine the dough ingredients in a large bowl and knead into a soft dough. Add two to three tablespoons of flour if needed. Divide the dough into 15 equal pieces and let it rest for half an hour. While the dough is resting, heat 3 tablespoons of vegetable oil in a pan and sauté the finely chopped onion until soft; then turn off the heat. Add the spices, spinach, and cheese to the pan and mix well. The spinach won't cook at this stage. Sprinkle the starch-flour mixture on top of the dough pieces and roll out with a rolling pin. Roll the dough around the rolling pin, then bring the two sides together in the middle without pressing. Then, roll it out into a spiral shape as shown in the video. Spread some oil on it, add the filling along one side, and roll it tightly. Place it on a greased baking tray. Repeat the process for all the dough pieces. Brush the top of the pastries with the melted butter. Bake in a preheated oven at 200 degrees Celsius on the lower rack until both the top and bottom are golden brown. Enjoy your meal!
