I love summer full of fruits and vegetables! There are so many, it would be a shame not to use them! Likewise, we use cherries for jams that we put in bread, cakes, biscuits, and even in combination with meat!
Today I made sweet bread for dessert with jam from white cherries. The red ones are loved by children, but the white ones remain for us, the adults, who do our duty to put them in jars for the winter! It is a very simple and useful recipe!
Cherry Jam:
Ingredients:
2 kg (4.4 lbs) pitted cherries
700 g (3.5 cups) sugar
(In the video, I used much more!)
Boil until the cherries soften, about 2 hours.
Sourdough Starter:
Ingredients:
50 g (1.76 oz) starter (from the fridge)
50 g (1/3 cup + 1 tbsp) flour
50 ml (3.4 tbsp) water at room temperature
Instructions:
Mix the starter, flour, and water. Leave at room temperature for 4-5 hours.
Once the starter has doubled in volume and has bubbles on top, it's time to make the dough.
Sweet Cherry Sourdough Bread:
Ingredients:
150 g (2/3 cup) activated sourdough starter
250 ml (1 cup + 1 tbsp) water at room temperature
400 g (3 1/3 cups) flour
100 g (1/3 cup + 2 tbsp) cherry jam without juice
7 g (1 1/4 tsp) salt
Optional: 20 g (1 2/3 tbsp) sugar
Instructions:
Pour water, sourdough starter, and cherry jam into a bowl. Mix everything together.
Add the flour, salt, and optional sugar. Knead the dough; it will be quite soft and a little sticky, which is normal!
Cover and leave at room temperature. During the 3-4 hour resting period, perform 3 sets of stretching and folding.
Once the dough has tripled in volume, it's time to shape it. Use a spatula because the dough is sticky!
Shape the dough into a loaf and place it in a baking dish lined with a towel. Sprinkle with water and flour!
Cover and refrigerate for at least 10 hours.
Preheat the oven with a Dutch oven inside to 220°C (428°F) for 20 minutes.
Take the loaf out of the fridge and place it directly into the hot Dutch oven. Cover with the lid and transfet it in the oven, bake for 40-45 minutes.
