Hey friends! Today we’re gonna make a super simple dinner using spinach and sweet potato as main ingredients.
Tip: do it slowly and enjoy the process :)
Wash sweet potatoes. Cut each into four chunks.
I prefer to keep the skin on so that it keeps the shape of a potato after cooking it.
Coat them with a thin layer of olive oil and place the sweet potatoes in the oven (180-215 C for 40 minutes or depending on the oven you use).
Wash and chop mushrooms of your choice.
Notice how beautiful each part of your mushrooms is, wow!
Add them to the pan and sauté until cooked.
Chop your spinach.
Add coconut milk, black pepper, turmeric, and chives to your mushrooms and cook for a few minutes more.
Finally, add spinach and let it sit for a minute or two for it to soften.
