Shikanji Masala is a masala drink powder made using natural ingredients such as cumin seeds, fennel seeds, cloves, cardamom, black pepper, dry ginger, rock sugar, black salt, and is used to prepare a healthy, refreshing summer drink called shikanji.

* Recipe makes approx. 10 glasses
* List of ingredients (Shikanji Masala):
1. Cumin seeds (jeera) - 2 tablespoons
2. Black peppercorns - 1 tablespoon
3. Fennel seeds (saunf) - 1 tablespoon
4. Cloves (laung) - 2
5. Cardamom pods (elaichi) - 3
6. Dry ginger powder (sonth) - 1 teaspoon
7. Dry mango powder (amchur) - 1 teaspoon
8. Rock sugar - Half cup
* List of ingredients (Shikanji):
1. Mint leaves (pudina) - 1 sprig
2. Lemon juice - Half lemon
3. Green chilli (slit) - 1
4. Black salt - 1/4th teaspoon
5. Salt - 1/4th teaspoon
6. Ice cubes - 4
* Method of preparation:
1. Into a small wok/pan, add 2 tablespoons jeera, 1 tablespoon each black peppercorns, saunf, 2 cloves, 3 elaichi and dry roast for about 5 minutes until aromatic. Then, turn off the heat, allow it to cool down and transfer into the mixer jar.
2. Next, add 1 teaspoon each dry ginger powder, amchur powder, half cup rock sugar and grind to make a fine powder. This prepared masala can be stored in an airtight container, for later.
3. To prepare a glass of refreshing Shikanji, into a tall glass add 2 tablespoons freshly prepared Shikanji Masala, 1 slit green chilli, a sprig of mint leaves, juice of half a lemon, 1/4th teaspoon each black salt, salt (can vary as per taste and quantity), 4 ice cubes, a glass of water and mix well.
4. Shikanji is best enjoyed on a hot summer afternoon.
