Ingredients:
For Noodles:
100 grams hakka noodles (or any thick noodle of your choice)
2 tablespoon cornstarch
1 tablespoon oil
Salt to taste
For Sauce:
1 cup sliced bell peppers (green and red)
1/2 cup sliced onions
1/2 cup chopped spring onions (both green and white parts)
3 cloves garlic, minced
2 tablespoons tomato ketchup
2 tablespoons sriracha (adjust to taste)
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon oil
Salt to taste
Instructions:
Prepare the noodles:
Boil noodles as per the package instruction. Add salt and oil while boiling the noodles.
Drain the noodles once they are cooked and transfer in a bowl. Gently coat the noodles with cornstarch and ensure noodles do not stick together.
Heat oil in a deep frying pan or wok.
Once the oil is hot, add the noodles in batches and fry until they turn crispy and golden brown.
Remove the fried noodles from the oil and drain excess oil by placing them on paper towels. Set aside.
Prepare the sauce:
In a wok, add oil. Saute onions, green onions(while part) and bellpeppers for about a minute.
Add tomato ketchup, chili sauce, soy sauce, vinegar, and salt. Adjust the seasoning according to your taste preference.

Combine the fried noodles with the prepared sauce. Toss everything together until the noodles and vegetables are evenly coated with the sauce.
