Pornstar Martini: A vanilla & passionfruit cocktail with a champagne sidecar

The Original Pornstar Martini

As someone who has worked in many UK cocktail bars, this cocktail is the one I’ve made the most of in my bartending career.

I’m surprised that this spec is rather uncommon even in the UK, since it’s become my personally favourite spec as well as being the original.

I very much enjoy how the spec includes a heavy pour of passionfruit purée which gives lots of flavour as well as providing a decent amount of acidity and foam. The vanilla sugar, infused with real vanilla as also a treat to use. Although this could easily be turned into a vanilla syrup for the purposes of ease. For me this leads to a more flavourful and less sweet (in a balanced I enjoy) than most of the ones I’ve had at a bar. Even though I not typically a PSM fan in most bars, the original is fantastic.

RIP to the legendary Douglas Ankrah

This spec was the closed I’ve been able to find to the original based on my research, I found a very good Punch article “Mastering the Pornstar Martini with Douglas Ankrah” by Brad Thomas Parsons that helped a lot . If anyone knows more please let me know, such as the exact measure of vodka.

50ml Vanilla Vodka (Cariel was the original, but Ankrah notes Absolut & Grey Goose work well)
15ml Passionfruit liqueur (the original uses )
60ml Passionfruit puree
2 Heaped teaspoons vanilla sugar
Champagne on the side & passionfruit garnish

Vanilla sugar
2 vanilla bean pods to 5 cups of sugar
Extract the paste from inside the vanilla pod & blend in a blender with the sugar
Store in a jar with the used vanilla pods
