Good morning dear friends!
Today, let's make a delicious dessert recipe - orange mousse with raspberries. (We all know, that orange pairs well with raspberry) This dessert doesn't require any cooking or an oven. It doesn't use flour or eggs. You can easily substitute the gelatin with it's vegetarian counterpart the agar-agar in 1:1 ratio (15 grams of gelatin with 15 grams of agar-agar). This dessert is loaded with the freshness and goodness of the sweet and tangy oranges and raspberries in every spoonful.
You can adjust the quantity of sugar based on the sweetness of the oranges you are using. I have skipped artificial colour and essence in the recipe. But if you are looking for a vibrant orange mousse, you can add a couple of drops of colour. If raspberries aren't available, it's ok to omit it - the mousse will still taste awesome. You can even skip the top layer of orange jelly if you are pressed for time. I'm sure you'll love it!

●For the orange Mousse:
15g gelatin
100ml water
150 ml orange juice (navel orange)
300ml whipping cream
30g sugar
Zest of one orange
Chopped segments of one orange
150 grams of frozen raspberries (Keep some aside for garnish)
●For the orange Jelly: (top layer)
5g gelatin
50ml water
150 ml orange juice (navel orange)
10grams - Sugar (optional)
A pinch of salt
1 orange cut into very thin slices
Garnish with a raspberry and mint leaves.
Serve chilled.
