Instructions:

1. Prepare all the vegetables and paneer by slicing them thinly.
2. Fill a shallow bowl with water.
3. Dip one rice paper sheet into the water for about 3-4 seconds until it softens.
4. Place the softened rice paper sheet on a clean surface.
5. Arrange the sliced paneer, vegetables, and seasoning (salt, oregano, chili flakes) in the center of the rice paper.
6. Fold the bottom of the rice paper over the filling, then fold in the sides, and roll it tightly to form a spring roll.

7. To make the soy sauce dip, mix soy sauce, vinegar, salt, and garnish with white sesame seeds.


Optional: For a crispy texture, lightly toast the assembled spring rolls on a pan for about 10 minutes until they turn golden brown. Enjoy your delicious Vietnamese spring rolls!
