Middle Eastern-Inspired Crispy Rice Paper Rolls:

If you are craving something crispy and delicious? These Vegan crispy rice paper rolls are the perfect solution!

They are super easy to make , gluten-free, plant-based Middle Eastern inspired rolls, and most importantly DELISH!

Ingredients:

1. 160 g Vegan Halloumi cheese ( grill cheese)
2. Spring roll rice papers
3. Persian cucumbers
4. Beef tomatoes
5. Mint leaves
6. Olive oil for grilling.
7. Black seeds.( optional)
8. Warm water for the rice papers.

Instructions:

1. Heat a grill pan and brush with olive oil , then add the cheese and grill for 5-7 mints on each side.
2. Prep the rice papers: add the warm water into a deep dish . Quickly dunk the rice paper in warm water and make sure its still a bit firm when you take it out of the water, it will soften as you roll it.
3. Transfer the rice paper into a dry surface and start adding the filling : mint leaves, cucumber slices, tomato slices and halloumi cheese. ( use double rice papers so you can fry them later)
4. Roll the rice papers, brush with little olive oil and sprinkle some black seeds on top ( optional)
5. Heat a non stick pan and add olive oil, add the rolls and fry for couple of mints on each side until crispy.
6. Serve them hot and enjoy!
