Ingredients:
1 lb (about 450g) chicken breast or thigh, boneless and skinless
2 medium carrots, peeled and chopped
Leeks, chopped
5 Beans
2 garlic
1 Egg
Noodles
Salt and pepper to taste
2 tablespoons olive or coconut oil
Curry leaves
Instructions:
In a large pot, heat olive/ coconut oil over medium heat. Add chopped Curry leaves and garlic, and sauté until onions are translucent.
Add chopped chicken carrots , beans and leeks to the pot, and cook for a few minutes until they start to soften.
Add salt, and pepper.
Simmer the soup for about 20-25 minutes or until the vegetables are tender and the chicken is cooked through.
Add Noodles.
Taste the soup and adjust the seasoning if needed.
Add Egg.
Serve hot, garnished with fresh parsley if desired.
