Immune Boosting Series Episode 5: Vegan Coconut Carrot Lentil Soup.

This soup is honestly great for any occasion. I like to make it when I’m in need of comfort food, when I am not feeling well, or if I want something hearty for meal prep. Lentils are so protein dense and full of fiber, any excuse to enjoy them is good for me.

Here’s What You’ll Need To Make This Soup:

✨2 cups Red Lentils
✨4 Large Carrots, chopped
✨2 Celery Stalks, chopped
✨4 cups Broth of choice
✨1.5 cup Full Fat Coconut Milk (1 13oz can) plus more to make the soup creamier if desired
✨1/2 cup Diced Tomatoes, about 3 Roma tomatoes
✨3 tbsp Fresh Ginger, minced about 2 inches fresh ginger
✨1 Small White Onion, chopped
✨3 Garlic Cloves, minced
✨1 tbsp Cooking Oil of choice
✨3 tsp Ground Cumin
✨2 tsp Ground Turmeric
✨1 tsp Ground Coriander
✨1 tsp Paprika
✨Salt & Pepper, to taste

Start by adding cooking oil to a pot over medium heat. Sauté onions for 3-5 mins, then add ginger, celery and sauce for 2 mins. Add carrots and spices, then sauce for 10 mins. Add remaining ingredients (except coconut milk). Bring the mixture to a boil, then reduce the heat to low and simmer for 30 mins, or until all the liquid has been absorbed. Add coconut milk and mix well. Cover the pot and simmer for five minutes. Blend the soup (in a heat-save blender or with an immersion blender) or leave as is. Taste and adjust as desired, adding more coconut milk to make more creamy and salt to enhance the flavor. Garnish with a dollop of vegan yogurt, fresh cilantro, parsley, and/or dill, && red crushed tomatoes Enjoy!
