I’m the only plant-based vegan in my home, with two kids and a husband who enjoy all the typical American foods.

When I first went vegan I found myself making multiple meals to make everyone happy. It left me feeling exhausted and frustrated. I often ended up making myself whatever was quick and easy which sometimes ended up being a bowl of cereal.

I knew there was a better way to attack mealtime that would make everyone, including myself happy. No more multiple dinners. I decided to make one plant-based meal that would satisfy everyone in my family. But I knew it wouldn’t be easy.

I’d have to figure out how to approach mealtime using plant-based ingredients that my kids and husband would eat. That meant taking their favorite meals and putting a plant-based twist on them. From Mac and cheese, fried rice, fettuccine Alfredo, chicken less nuggets and so much more I not only found the secret sauce (pun intended) but I also watched my family transform their eating habits.
