Just getting started with cooking doesn’t have to be complicated - this carrot side was inspired by a recipe I saw on Queer Eye and is my approximation as follows:
6 carrots
Olive oil (1 tablespoon)
Vegan butter (1/2 tablespoon)
Thyme - dried, 1/2 tsp
Salt - 1/2 tsp - didn’t measure :/
Honey - a drizzle on top
It cooked so quickly and easily and can pair so many proteins - chicken, fish, lentils, tofu!
This is the sorts of small changes you can start adding in to your diet to feel your best. Carrots are SO cheap and delicious! Even picky eaters will enjoy this side dish.
I use cast iron because it’s non toxic and even gives a little boost of iron to your meal.
