Chop up the veggies, bake the tofu and whisk up the dressing and in minutes you’ll have a mouthwatering salad that’s great for meal prep.

You’ll need about 1/4 - 1/3 cup of each vegetable, 1/2 block Big Mountain Foods Soy Free Tofu (32g protein), a serving of cooked rice noodles* (about 1/3 cup blended with @SMOOV Wave Blend) and the peanut lime dressing (3-4g protein), recipe below.

* Use low carb rice noodles or omit for keto option. Use sugar free sweetener to taste for keto option.

Peanut Lime Dressing
(1 serving)

Juice of half a lime
1 TBSP peanut butter
1 TBSP low-sodium tamari
1/2 TBSP maple syrup
1/2 tsp minced garlic
1/2 tsp minced ginger
Water (as needed for desired consistency)

Whisk all ingredients until smooth and well-blended. Taste and adjust as necessary.
