Multigrain Mix Vegetable Paratha✨

Start your day with a power-packed multi-grain, multi-vegetable paratha! Nutritious, healthy, and versatile—perfect for breakfast, lunch, or dinner. Pair it with curd and pickle for a wholesome meal.

Ingredients:( multigrain dough)
1/4 cup atta/wholewheat
1/4 cup ragi/finger millet flour
1/4 cup jowar/ sorghum flour
1/4 cup Makki ka atta/ maize flour
1/4 cup besan / chickpeas flour
Salt at per taste
1 tbsp oil
1 cup approx hot water

Mix all the flour and salt, then add hot water. Make a dough and let it rest for 30 to 45 minutes while you prepare the filling. Cover and set aside.

Filling
1/4 cup cauliflower
1/6 cup french beans
1 capsicum
1 carrot
1 onion
1 inch ginger
1 potato
1 tbsp oil
1/2 tsp turmeric
1 tbsp homemade garam masala( i have used pav bhaji masala)

a pan, add oil, then all the chopped and finely grated vegetables. Sauté for 2 to 3 minutes, then add turmeric, salt, and homemade garam masala. Add a little water, about 100 ml. Cover and cook until the water reduces and the mixture becomes tight. Let the mixture cool down. Then, take a small portion of atta, stuff it with the masala, and roll it gently using butter paper or cheesecloth, as I did. Cook it on a tawa, sprinkling a little oil, and cook on both sides. Enjoy with pickle or curd.
