Some of you asked how I made the fish from the lemon video, so I wanted to share the recipe here. It’s based on Ina Garten’s recipe, but I made it even simpler.
Ingredients:
•4 cod fillets
•olive oil
•1/3 cup panko breadcrumbs
•2 cloves of garlic, minced
•2 tbsp fresh chopped parsley
•3 tbsp lemon juice
•1 tbsp lemon zest
•3 tbsp butter, melted
•salt and pepper
Instructions:
1. Preheat oven to 400 degrees.
2. In a baking dish, pour around 2 tbsp of olive oil. I used a 13x9.
3. Add the fish and turn to coat the fillets in the oil.
4. Sprinkle with salt and pepper and bake for 10 minutes.
5. While the fish is baking, mix together the breadcrumbs, parsley, garlic, lemon zest and some salt. Then stir in the melted butter.
6. Remove the fish from the oven and pour the lemon juice over the fish fillets.
7. Pat the breadcrumb mixture onto the fish, gently pressing to get them to adhere. It’s ok of some falls in the sauce.
8. Place back in the oven for about 12 minutes.
9. Remove from oven and sprinkle with salt.
10. Serve with the sauce from baking dish and some lemon wedges.
