2 cups cooked green peas
2 cups finely chopped English cucumber, seeds removed
1 cup finely chopped celery
1 cup crumbled feta cheese
1/2 cup chopped pistachios
1/2 cup chopped fresh basil
1/3 cup chopped fresh dill
1 15-oz can cannellini beans, rinsed and drained
1 ripe avocado
1 tbsp olive oil
1 tbsp apple cider vinegar
1/2 tbsp honey or maple syrup
1 clove minced garlic
1/2 tsp salt
1/4 tsp pepper

1️⃣Add the peas, cucumber, feta, pistachios, celery, basil, dill and cannellini beans to a large salad bowl. Set aside.2️⃣Make the avocado mash. Add the avocado to a medium bowl, then mash to remove any chunks. Add the olive oil, apple cider vinegar, honey, garlic, salt and pepper, then mix to combine. 3️⃣Add the avocado mash to the salad bowl, then toss all of the ingredients together.
