French Onion Pasta (Vegan)

So I may be a year late to this one-pot french onion soup pasta trend, but it's starting to get cozy here and I needed to try it! And let me tell you, it did NOT disappoint! I didn't see many vegan options out there so I decided to whip this one up! It has the perfect marriage of flavors with the depth from the caramelized onions and is creamy with every bite. I hope you can cozy up to this simple one pot meal!

Ingredients:
-3 yellow onions, chopped
-3 tbsp vegan butter
-1 tbsp olive oil
-3 cloves garlic, minced
-1 tsp of thyme (fresh or dried)
-2 cups / 10 oz. pasta
-3 1/2 cups vegetable broth (try to use a super flavorful one)
-3/4 cup coconut cream
-1/2 cup vegan parmesan cheese

Instructions:
-Slice your onions then add to a pan with olive oil and butter and cook on medium low for 25-30 minutes stirring frequently. They should be caramelized and golden.
-Add thyme, garlic, pasta, and vegetable broth. Simmer for 15 min on medium-high (until most liquid is absorbed). Stir from time to time
-Add cream and cheese. Stir to combine, simmer for a few minutes until the cheese melts. Garnish and enjoy!
