Ingredients:
Dough Ingredients:
- 3.25 cups bread flour or all-purpose flour + 2 to 3 tbsp for kneading
- 0.5 cups sugar
- 1.5 tsp instant dry yeast or 20 g fresh yeast
- 1.25 cups plant milk (soy, almond, oat)
- 5 tbsp sunflower oil
- 2 tsp vanilla extract
- 1 tbsp 1 orange sugar
- 1 pinch salt

- 2 cups plant milk (soy, almond, oat, rice)
- 6.5 tbsp sugar
- 6.5 tbsp cornstarch
- 1 tsp vanilla extract
- Zest of ½ lemon
- ⅛ tsp turmeric (optional for color)
- 1 cup raisins
Instructions:
- Make the Dough:
1. Combine Dry Ingredients: In a large bowl, mix the flour, sugar, instant dry yeast, and salt.
2. Mix Wet Ingredients: In another bowl, whisk together the plant milk, lukewarm water, sunflower oil, vanilla extract, and orange sugar.
3. Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until a dough forms.
4. Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Add extra flour as needed for kneading.
5. First Rise: Place the dough in a greased bowl, cover it with a cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the Custard:
1. Mix Ingredients: In a saucepan, combine the plant milk, sugar, cornstarch, vanilla extract, lemon zest, and turmeric (if using).
2. Cook Custard: Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil. Once thick, remove from heat and let it cool slightly.
- Assemble:
1. Shape the Dough: After the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle.
2. Add Custard: Spread the custard evenly over the dough, leaving a small border around the edges. Then start sprinkler the raisins.
3. Roll Up: Roll the dough tightly from one end to the other to form a log. Pinch the seams to seal.
4. Second Rise: Cut the roll into even slices and arrange them in an oven-safe pan. Cover and let it rise for another 30-40 minutes.
- Bake:
1. Preheat Oven: While the dough is rising, preheat your oven to 360°F (180°C).
2. Bake: Bake for about 18-20 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
3. Cool: Allow it to cool in the pan for a few minutes before transferring it to a wire rack.
