This dish takes me straight back to the Dominican Republic—dancing, eating, and enjoying the best flavors! Today, I’m sharing how to make Mangu with salami, Dominican cheese, eggs, and avocado. It’s the perfect comforting breakfast (or lunch!) packed with traditional flavors.
Ingredients:
• Green plantains
• Dominican salami
• Queso de hoja (Dominican cheese)
• Eggs
• Avocado
Instructions:
1. Boil the green plantains for 20 minutes with a pinch of salt.
2. Mash the plantains with butter and a bit of the boiling water. For extra softness, add a splash of cold water.
3. Fry the eggs and salami. I usually eat my mangu with fried cheese, but I went with queso de hoja this time—it’s delicious but best enjoyed fresh, not fried.
4. Top it off with avocado because, as a Dominican, avocado is a must with everything!
Optional: In the Dominican Republic, many people add red onions to their mangu, but I prefer it without.
