An easy, no-cook summer salad featuring foods high in fiber, protein, antioxidants, and low in fat. Crisp veggies make this either a meal or snack based on ingredients you may already have in your kitchen or what you have a taste for. There are no right or wrong ways to make this recipe. For me, I used what I had on hand and dined al fresco.
Ingredients:
1 can chickpeas, drained & rinsed
2 small Persian cucumbers, diced
Diced onion
Diced bell pepper
Feta cheese
Dressing:
Fresh lemon juice
Olive oil
Salt
Pepper
Garlic powder
Fresh basil, chopped
*Italian salad dressing can be used versus – homemade dressing
