1/2 yellow onion, diced
4 cloves garlic, minced
2 Tbsp fresh basil, chiffonade
1 28oz canned whole crushed, crushed with your hands
1/2 tsp red pepper flakes
2 Tbsp tomato paste
salt and pepper

Chicken

2 chicken breast butterflied
flour
eggs
bread crumbs mixed with parmesan cheese
enough to coat
frying oil

Other ingredients
mozzarella cheese
chives to garnish

In a pan over medium heat, add olive oil and once hot, saute your onion and garlic until softened 2-3 minutes. Then add your red pepper flakes and tomato paste and cook for about 2 minutes. Next, add your crushed tomatoes, basil, salt and pepper. Turn down the heat and let simmer for about 10 minutes.
Next, butterfly your chicken breasts and coat in flour, eggs and bread crumbs. Set aside on a sheet pan.
In a pan over medium high heat, add about 1/2 inch of oil and heat until 375f. Then add one of your breaded chicken breasts and let cook for 3-4 minutes or until golden brown. Carefully flip and cook until the other side is golden brown. Once your chicken is fully cooked, remove to a sheet pan with a wire rack.
Top your fried chicken with some tomato sauce and sliced fresh mozzarella cheese. Broil until the cheese is golden brown.
Serve with thinly sliced chives and enjoy!
