Ingredients and measures

- 3 large onions, thinly sliced
- 6 tbsp butter
- Salt to taste
- 400g boiled chickpeas (remove outer skin for a creamier texture, or use canned)
- 6 tbsp tahini
- 1 head of garlic, cloves
- 1 lemon, juiced
- 4-6 ice cubes
- Olive oil for drizzling
- Salt to taste
- Optional garnishes: Caramelised onions, red chili powder/flakes, sumac, toasted cumin crushed

1. Thinly slice the onions.
2. Add butter to a saucepan, let it melt.
3. Add the onions and lower the flame to medium low.
4. Keep stirring periodically to allow even caramelisation. Scrape the bottom of the pan at intervals. Onions should turn a light golden in about 20-30 minutes.
5. Reserve 1 tbsp for garnishing.
6. In a food processor, combine the chickpeas, tahini, garlic, onions, salt and 1-2 ice cubes at a time. Blitz for 6-8 minutes in intervals, adding ice cubes till a smooth and creamy texture is reached.
7. Spread on a serving dish, making deep indents to drizzle olive oil.
8. Garnish with the reserved caramelised onions.

- Enjoy with pita bites, or your favourite veggies!
