Yes, the flattened croissant is totally worth the hype! We finally made one, but gf/df/v.
Gluten-free croissants ARE a little fragile, so it was trickier, but in the end it turned out delicious. I love how crispy it gets after cooling.
Here’s how we did it:
Ingredients:
-gluten-free/dairy-free croissants (see note below for sources*)
-avocado spray oil, instead of butter
-organic maple syrup, instead of brown sugar
-vegan “milk” chocolate for drizzling
-chopped pistachios
Steps:
1. Defrost your croissant if it’s frozen, then microwave to warm it up and make it super soft
2. Use a rolling pin to flatten out the croissant as best you can. Mine did fall apart and needed to be moved carefully with a spatula (but after the whole process, and cooling, it did stick back together and could be picked up)
3. Transfer to baking sheet lined with parchment paper
4. Spray lightly with cooking spray
5. Brush with maple syrup (the combo of fat & sugar is what helps it get super crispy when you cook/bake it)
6. Add another sheet of parchment, another sheet tray, and a heavy oven-safe pot if you have one (we used a cast iron pan)
7. Bake at 350F for 15-20 minutes, then remove and let cool
8. Drizzle with melted chocolate of choice, and sprinkle with your fav crunchy bits (nuts, sprinkles, cocao nibs, etc)
9. Enjoy!!

- But another gluten-free/dairy-free croissant option if you live in Canada is from L’Artisan in Montreal, Quebec (and they can ship too! But they do use eggs)
