Tom Kha Gai
Makes 6-6.5 cups
Infusion: Mix the following together. Do not boil, just a very low simmer for 30 minutes
2-4 inches Galanga root
2 stalks grated Lemon Grass, or 2 tablespoons grated or 2 teaspoons dried
1 teaspoon sugar
2 tablespoons soy sauce
1 can of coconut milk
½ teaspoon lime zest
Soup- Dry Sauté the vegetables, not the tomato. Then add the tomato, water, and bouillon. Bring to a boil, then lower heat, cover with a lid, and simmer until veggies are crisp and tender.
¼ cup diced onion
3 cloves garlic- minced
¼ cup diced red pepper
1 cup shredded carrot
1 cup diced mushrooms
2 whole chilies
½ cup diced tomato
3 cups water
1 tablespoon Better Than Bouillon paste
Strain infusion. Combine both the infusion and soup. Add tofu. Then garnish.
16 oz silken or soft tofu- drain and cube
Garnish
Juice of 2-3 limes
Green onion tops- chop
Cilantro- fresh or dried
