**Mediterranean Lentil Salad | Easy & Healthy Recipe**
Welcome back to my channel! Today, I'm excited to share a quick and delicious recipe for Mediterranean Lentil Salad. This vibrant dish features sautéed veggies, crumbled feta, fresh dill, and a zesty lemon-Dijon vinaigrette. It's perfect for meal prepping and makes an ideal weekday lunch.
**Ingredients:**
- 2 Tbsp. extra-virgin olive oil
- 1 red bell pepper, diced
- 8 oz. green beans, trimmed and cut into 1-inch pieces
- 1 cup diced red onion
- ¼ tsp. each kosher salt and black pepper
- 2 (15-oz.) cans lentils, rinsed, or 3 cups cooked brown or green lentils
- ¾ cup crumbled feta cheese, divided
**Lemon-Dijon Dressing:**
- ¼ cup extra-virgin olive oil
- 3 Tbsp. fresh lemon juice
- 2 tsp. Dijon mustard
- ¼ tsp. ground cumin
- ¼ tsp. each kosher salt and black pepper
- ⅓ cup finely chopped fresh dill, plus more for garnish
**Instructions:**
1. Heat the olive oil in a large skillet over medium heat. Add the diced red bell pepper, green beans, and red onion. Sauté for 7-9 minutes until tender, seasoning with salt and pepper.
2. In a small bowl, whisk together the ingredients for the lemon-Dijon dressing. Stir in fresh dill.
3. In a large mixing bowl, combine the cooked lentils, sautéed veggies, and dressing. Toss with ½ cup of feta cheese. Garnish with the remaining feta and extra dill, if desired.
