My partner and I caregiver for her elderly mom who needs soft and low sodium foods.
I don't want her to feel left out at meal time by creating something completely separate for her, so I try to make her a similar version to the meal the rest of the family is eating...but soft and lower in sodium.
Here's a couple of things I focus on:
Making her meal softer - I over cook things, such as steamed veggies for our elderly parent to make them softer. I also add broth to her meals to make them easier to chew.
I make the rest of the families meals more textured with raw or air fried veggies. And I often finish our meals off with herbs, seeds, and nuts for more texture.
Making her meals lower sodium - The doctor recommended she has a lower sodium intake. She is aloud to have some salt of course, just less than your typical diet. So I often buy no salt added ingredients, such as canned beans or pastas. I also make a lot of things from scratch so I can control the sodium levels. If I use a jarred, store-bought sauce, I often dilute it with low sodium broth, coconut milk, or another no-salt liquid.
